Sounds like its doing perfectly to me! Lager yeasts aren't so violent fermenters as some of the ale yeasts are probably due to the decreased fermentation temps. Give it a lot of time to ferment out and maintain that temperature and you will have a great lager!

Big Brew Day 09!
Well everyone, Our club decided to get together for Big Brew Day and brew the Saison Du Mont. We will be brewing a 30 gallon batch and will run it off into 6 club members kettles! The session will be held at my house and we'll be mashing 55.25 lb of malt! I'll let you all know how things go tomorrow...

Hey GuardianBrew, Have you considered smoking a lb of malt in a smoker using Hickory wood? I'm not so sure you would get that hickory flavor from introducing wood chips to the beer in the secondary.
