Thanks for the info, Bill. As it turns out, you are correct, the yeast lives! It started bubbling yesterday, probably around 24 hours after the pitch. I have the primary in an air conditioned room with an ambient temp of around 72*, so hopefully I won't get *too* many esters. Do you think the esters...

Wort too hot when yeast was pitched??

:( Brewed batch #3 last night. (BTW - the second one came out great, very hoppy like an IPA. I've had my first requests for a repeat batch  ) Anyway, batch # 3 - it is a Berry Beer kit from morebeer.com - using White Labs California Ale yeast. Everything went ok during prep, did my boil (after ...

tasting my first batch

well, bottled last friday, tried one of them on sunday...slight carb, decent taste... tried another last night (i know they're not ready, but trying to get some experience as to how the beer carbonates and ages over time - at least that's my excuse!) - I was surprised by it - it had a good level of ...

Was sort of a warm ferment

Thanks for the info, I was thinking along the same lines, but seeing as how this is my first batch I have no prior experience to go off! Your comment about the fusel alcohols and warm ferment worries me a bit...I was worried about fermentation temps being too cold, so I got a brew belt (the little w...

Slime on surface of beer in 2nd fermenter

Looking at my first batch of beer in the secondary fermenter, I noticed lots of stuff on the surface of the beer. When it was racked to secondary, it had a lot of airlock activity and now there is a 'scum line' maybe 1/4 inch above the beer. What I first thought was little circles of mold on the top...

Converting 5G boil recipe to a 3G boil recipe

Hi guys, I saw a recipe on homebrewheaven that I wanted to try (the vanilla weizen). Unfortunately, I am only setup to do 3G boils right now, and the recipe is for 5G boils...how can I convert the recipe? It might be a pain because I don't think homebrew heaven divulges the exact measurements of the...

Progress of first batch

Hi guys, Well the first batch (a summer ale) is now in the secondary, scheduled to be bottled this weekend (1 week primary, 2 week secondary, planning 2 weeks bottle conditioning) Siphoning and all went ok - had past experience from fishtanks when I was a kid, so at least i didn't go in *completely*...

Thanks for the info, guys. Billy, I'll post the exact wording of the c-brite when i get home, but IIRC it says something like, "You must achieve a 100ppm chlorine to water ratio...1 oz of c-brite to 2-2.5 G of water achieves this ratio" They also recommend a 1-2 minute contact time What I ...

Sanitizing w/ C-Brite

So I picked up a little can of C-Brite @ the homebrew store, and was just wondering if anyone here uses it and with what kind of success? I'll be racking my first batch this weekend, and am worried about sanitizing the racking cane, etc... When I brewed I soaked all the stuff in the primary fermente...

What's wrong with my fermentation?

The kit contained: 1 can wheat malt 2.2 lbs dry malt extract 1 oz fuggle hops for bittering 1oz williamette hops for aroms 10 g lemon zest yeast nutrient gypsum the yeast was a dry...

Lemons in weissbier

Replying to this very old post - I was just at a tasting at the Harpoon Brewery in Boston, MA and they explained the origins of the lemons in the beer. According to them barkeeps placed lemons in the glasses of weissbier so the waitresses could tell them apart from the other beers on the serving tra...

Sterilization questions

Hi all, So I am embarking on the great journey of homebrewing and am going to purchase a kit tomorrow and give it a shot. My main worry at this point is sterilization...I live in an apartment bachelor pad and while we are much cleaner than most, we are definitely not going to win any awards. Does an...

Newbie looking to get started

Hi all, I am just starting out w/ home brewing and am looking to buy a kit which will have all the equipment I will need. I am looking to start out simple but I don't want the equipment I buy to restrict me too much as I advance my skills. I was looking at the following kits, but I don't really know...
