The beer tasted funny right off and then after about a month or two it starts to taste better and by the third month or so it tastes great. The taste is not in the fementers, not the first or the second. Its in the...

bitter versus temperature of beer
I find that the beer tastes more bitter when the brew is cold, after it sets for a while and warms up that taste seems to mellow out. I find the beer tastes a lot different at different temperatures. Does anyone know the cause of this, besides alzhimers I mean.

I have had reasonable luck with overcarbonating the beer, then drop the keg pressure very low and slowly add the beer, I keep the keg and bottles at 38 degrees. I don't know if I have let too much oxygen in, using that process but havn]t really seen any problem yet. I would suggest just trying this ...

Thanks for responding, I have been away from the computer awhile. I have myself set up to keep about 6 carboys in the secondary stage before kegging. I thought I was getting some bad beer, this happens from time to time. But I found out ( and keep forgetting) that leave it alone for a while and the ...

waiting too long to rack
Is it a problem to let the primary stand too long, ie over 1 week, and in the secondary more than a month? for ales, and for heavier beers? thanks.

hot break boil over
Has anyone come up with a solution for that? I use a 15 gallon keg, and with the 10 gallon batches, using 11 gallons, if I am not there to turn the heat down it boils over, sometime quite a bit. thanks.

I figure that this evens out the temperture and other thins. continue till I get about 3/4 in both carboys. Then I put the rest in with a gallon plastic jug that i had th...
