2ndary Fermentation Trouble?

I have a belgian dubble in 2ndary for 10 days so far and from 1 it had an active airlock (actually a blow-off tube). Not traub, but co2 into the adjacent grolwer of water. There has been a layer of traub on top, but not expelled through blow off tube. Last night as I was getting ready for bed, I not...

Secondary Fermentation time for Belgian Dark/Dubbell

Racked to 2ndary last Friday after 14 days in Primary. There was sporadic bubbling in the airlock. After racking, there has been 4+ days of slow, but consistent bubbling (no added yeast or cadi sugar, though still thinking of adding candi sugar). Was thinking of either bottling on Sunday (9 days 2nd...

Gruit Ale Recipe

Anyone tinkered with this style before? I have been reading about it and thinkng of giving it a whirl. For flavor sake i may sneak in some hops or may wet hop it in the seconday. Maybe split a batch into traditional w/out hops and a version with. Where does one get wet hops? Anyone have a recipe tha...

Belgian Dark Ale yeast question

Has anyone experimented with adding another yeast into seconday fermentation?

When i am ready to keg or bottle, i have heard some add yeast then for bottle conditioning and carbonation. does that mean no bottling sugar?

thanks for your time.

thanks for your time Ron. I am using White Labs 1762 Belgiam Abbey II liquid yeast. I am actually brewing this as two 5 gallon batches. My thought is to spice one slightly differently during fermentation and maybe keg 5 gallon and bottling the other. But I am thinking that bottling all 10 gallons mi...

Goal fermentation temp for Belgian Dark Ale

I am brewing 10 gallons this weekend. I will split into to 6.5 gallon carboys to allow for a little different tinkering (dry hopping, spicing, etc) in the primary and secondary. My question is what temp for this type of beer should i shoot for?

Thanks for your time

Ring around the brew pot

at the end of the boil, after cooling with the wort chiller, there is a ring of hops and other ingredients. I have stirred them back in and also transfered to the primary w/out reintegrating the sludge, but what is the proper way to do it? after primary when transfering to secondary i always leave t...

How long will beer be good in a keg?

i am new to kegging and i am wondering how long i can expect my homebrew to stay "fresh" in the keg? Other questions: How long from kegging is a beer ready to drink? I am doing a belgian dark al on Saturday and wondering when i should expect to tap it! I also assume, that once beer is in t...
