I have begun to enjoy beers that are labled blonde, but don't know what it really means. Can anyone tell me what the criteria is in english rather than numbers?

I usually find the instructions for grains not very clear. The reason I liked your method is it was very simple and clear. What exactly is your steeping method?

Quick and Dirty Question
I am about to try a steam beer that uses 80L Crystal as the only specialty grain (the other ingredients are 6 lbs of extract and hops), would your technique work for this recipe?

How long?
If I aerate the wort as i fill the primary, how long is too long to leave it sitting before pitching the yeast? Should it be soon to stop whatever may grow on the oxygen? I'm sure best case senario would be directly after, but am just curious if aerated wort is in danger until yeast is pitched?
