San Francisco lager

Billy, I you wish to have a dabble at a lager, without going to the trouble of thermostats and refrigerators, try the Whitelabs San Francisco Lager yeast. This little gem will work quite quite well up to 62 degrees F and still give a wonderful result.

Thanks for that information. Can the hot water have an effect on the attenuation of the yeast in the wort?

Pilsner Lager Yeast

I'm terribly sorry for the late reply, but it is the WLP800 that I had problems with. I received a reply from Chris White (White Labs) who said that this lager yeast 'appears' to ferment on the top.

Alcohol & mercury

The thermometres I have are the alcohol and mercury type. I placed both of them in boiling water (I live right near the beach/ sea level.)the mercury thermo was reading right on 100 deg c and the other which is an alcohol filled thermometer was reading 92 degrees c. Pilsner Lager Yeast

Has anyone used White Labs Pilsner Lager yeast? I have found that this yeast appears to be a top fermenting yeast with a slimy looking head that does not subside but keeps getting bigger and bigger until it overflows into the airlock.
Any body have a similar story on this strain

Cloudy hot break

I created a recipe from the generator for a pale ale and used 4.3 kilos of pale malt and 1.07 kilos of malted wheat. I had a mash at 67 degrees for 1 1/2 hours. I notice that at the hot break the brew was very cloudy. Is this because of the amount of malted wheat??
