relax
high temps breed fast fermentations.. Not to worry, I'm sure the beer is fine. It's up to you as to the secondary. Just be sure you idophor everything again before racking. Same is true with bottling. Sanitize the bottles as well as the hardware. If you bottle, give it about a week at room temp befo...

pectin? What's this going to do?
I already did the deed, so what should I expect? Last year I used canned blackberries, and this year I used "fresh" ones from the Produce Department of my local grocery store. It would only be fitting if this beer ends up skunky. After all, it was suppose to be served at the victory party ...

Fruity Fermentables?
My winter warmer uses fresh blackberries and allspice. Do the boiled blackberries add fermentables?

Octoberfest Tasting
As is my normal process, I tried my first glass of the octoberfest today (I normally have a glass the first week after kegging, the second week after keggin, and so forth until I feel it's ready). The flavor is good, but I hate the yeast I used. It left it with a bit of a tart fruity tast along with...

I'm going to be immortal!
I've not drunk a light beer since junior year in college! Actually, I have also read that people who drink alcohol, reguardless of the type (wine, spirits, beer) have a lower chance of heart desiese. I guess that means we're health AND less apt to have heart desiese! Nice!

Unfortunately my tubing was too small.. I ended up pulling the cork out, removing the airlock, and replacing it with a tube that could reach the water on the floor. I don't know exactly how long it took, but it was just a few minuts. Hopefully it didn't hurt anything. I couldn't go to sleep with Sis...

Help!!! My Yeast has gone mad! Need advice quick!
Ok, I just put my winter warmer in brew Sunday. Now the yeast is starting to bubble into the airlock! I have seen some info about how this is bad, and how to make an alternate airlock. Unfortunately, my current airlock is stuck in the stopper, and I have no more holed stoppers to make the airlock go...

It was quite a tasty little sample actually. I'll drop it in the keg tonight, then. Thanks to all for the help!

Yup
It definately fermented some. You can taste it. All the info is in the reply to jayhawk. Thank you both for helping me so quickly! I hate the thought of loosing my most expensive beer so far, especially when it's for a house warming next month.

1.5 weeks
I brewed it on the 26th of october. It should have had a very high OG, and I assume it has fermented quite a bit more than I had origonally thought (the fermentation was not very active). I used the wrong yeast in the first place. I used 1338 European Ale yeast. A full-bodied yeast as opposed to a c...

Not Fermenting?
Is there any way that the yeast can multiply as usual but not ferment any beer? For 4 days, the beer's been in the primary. The foam reached it's peak prolly tuesday night. The airlock is bubbling, but slowly, and that smell that normally fills the room isn't there. The beer is a late octoberfest. I...

My limited knowlege
Lagers ferment at a much lower temp than ales. I think the norm is ~55F. It's my understanding that the fermentation takes closter to a month, and the beer needs to stay at constant temperature. I personally have no way to get the temp that low and keep it close to constant, so I brewed my Oct-fest ...
