I just tasted a British dark Mild I brewed this month -- It's a beauty, and would be a highly refreshing summertime ale. Classic Mild style, with low alcohol, but a good bit of character from some roasted grains and a hint of British hops on top. Very clean and fresh, yet dark. See the recipe at htt...

I have an easy way to hit the target gravity: If you are boiling something less than the full 5 gallons, say 3 gallons, then only pour one gallon of fresh cold water into the fermenter first, not the full 2. When the wort is appropriately cooled, dump it in to the fermenter -- now holding about 4 ga...

It Worked!

Just wanted to say thanks and let you know the ESB turned out GREAT! You wrote to me on the Hop VIne forum about leaving my ESB in the bottle a couple more weeks before testing again -- (there was no carbonation after the first week.) Well -- I just opened her up after waiting 2 full weeks more -- p...

Thanks, Wottaguy. I will TRY to be patient...
(but the problem is that the stuff tasted so !@#$ good! It was a real hit of a recipe)

I'll give it a while.

Fruity aromas & Esters

Question for the chemists: I bottled an IPA a month ago and have been sampling since. It has an almost overpowering fruitiness when poured -- Strong esters (so I'm told.) that are not really that pleasant. I find that if I chill it all the way down to fridge temperature (~42

Thanks. Does that mean that you can really wait longer to put extract into a grain tea for all recipes? Also, is there a difference between DME and LME in the boil? That is, does one or the other stand up better to the full 60-minute boil? I'm still learning this stuff -- On my 3rd batch now. MrD.

Adding Extracts late in Boil

I need some help in understanding why some recipes call for adding extracts late in the boil. Why, for example, does a BYO extract+grains recipe for an Anchor Steam clone have a usual first-boil addition of some DME, followed 45 minutes later by the addition of a can of LME? What function is served ...
