i almost skipped this one, but i had to throw in my 2 cents. i love the combination of tettnager and northernbrewer. id say they are my fave for dry hop and flame out additions. try a blend of the two you wont regret it.

i dont think you have amarillo on your hop variety choices. i would like to see that added as well as other varieties that you dont commonly see (simcoe) and the other low cohumulone varieties. thats if you havent already added it. i havent looked recently.

check out siebel institute. go to the goose island brewery, they all do internships and stuff there... i think. anyways, there are plenty of brewerys in chi that you can go to.

MINIBREW

Hey, I have a plastic mini brew. It is great, I just keep diligent when cleaning and caring for it. Other than it not being as durable as SS, I dont have any complaints. You just have to be a stickler for cleanliness. If you all have any questions, let me know. Best to you.

your missing some stuff

first, i would increase the wheat in your bill. this is close to a wit beir. i would also add some nice, freshly grounded coriander to the recipe towards the end of the boil. that is what gives oberon (one of my all time fave biers) its spicy bite.
