So, I've never racked to a secondary before, but will probably do some with this brew Tuesday... I've read that some folks put a little sugar/water in teh secondary to allow for a little extra fermentation to... produce a thin layer of carbon dioxide over the top of your beer which will help stop in...

Your avatar it too funny.. LOL! I picked a recipe at random from beer tools, and according to everything I'm reading here and else where, my choice was a mistake, at least as far as an Oktoberfest goes... So, I don't really blame you for asking...

A great source for the official style guidelines is the BJCP website . If you want to try an Alt, and can get the Long Trail brewery's beer, try the Long Trail Ale. Tuckerman's Brewing makes a nice Alt, but it's more limited in distribution. Try to keep that fermentor cool. Alts like to be fermente...

Need Some Advice!

OK, well it looks like, on top of my recipe/method gaffs, something maybe wrong with my yeast...

Please read and provide feedback if you have the time... Yeast are pretty lazy this time around. Is there anything I can do?

Are you aware that Munich and Vienna Malts need to be mashed, not steeped? Typically, Oktoberfests contain more like 5# of Munich Malt and are a primary component of an Oktoberfest's flavor. 1/4# of Munich and 1/3# of Vienna won't give a noticeable flavor contribution. Well I appreciate the advice... I think, once I get some free time, I'll try the SS braid. At the very least it feels more in line with the DIY spirit of the project. If I find it to be a pain in the neck, I could always pickup a false bottom and retool... I'll try to post an update here when I move...

I just picked up a used 5 gallon Gatorade cooler for $3 on Craig's list . My plan is to do a conversion and use it for batch sparging. I'd say it's been about a week. Once I put it back in the "fermenting room" the bubbler stopped. I honestly think it was jsut the slight jostling around as I went up the stairs.

I'm not really sure how the beer got out either, but a little (very little) did... Here's the problem with the gravity reading. I was rushed on brew day, and foolishly failed to get a gravity reading... A rookie mistake, but I had people over, and was distracted by other beer, a football game and so...

OK, I need some help. I brewed a batch of Brewers Best Holiday Ale, and left it in the fermenter for an extra week. Just got done sanitizing my bottles and bottling bucket, etc. And went down stairs to grab the carboy. When I got it in the kitchen I noticed some beer seeped out of the plug and dripp...
