Witbier ingredients questions
-what is the theory of "when" spices are supposed to be added to the mix? --I normally add them with about 10-15 minutes left in boil.....and then a little more maybe for a short steep. --How about kaffir lime leaves? Anybody ever experiment? I tried once.....Not quite sure how much to add...

Lagering Question
I have 5 different german style lagers going right now.....it is starting to get too warm on my backporch though.....If I bottle these and condition them...then can I just throw them in the fridge to lager after they are properly carbonated????Will this have the same effect as long term lagering in ...

starch conversion times???
i did two 5 gallon batches of the same beer over the weekend.....i made the recipes my self.....i am curious about what other people are getting for the actual times for complete starch conversions; i am using iodine for testing....the batch was 11.5 pounds of grain in about 4.5 gallons of water.......
