Although I don't plan it this way, I almost always end up throwing some Bob Marley & the Wailers in the CD player when I'm brewing. "Room to Roam" by the Waterboys usually makes its way into the rotation too.

John Palmer's book How to Brew has a good discussion on the merits of secondary fermenation. It's free on the internet: http://www.howtobrew.com However, it's good enough that you'll probably want to pick up a hard copy and help him earn a little dough.

I didn't use a starter, but will use one for my next batch. I didn't aerate the batch when racking it to the secondary. The gravity was only down to 1.032 today. I'm starting to feel like I'll be lucky to get it down to 1.025 or so. Live and learn. Thanks to both of you for the help.

I brewed a batch of robust porter recently and achieved an OG of 1.058 with an intended FG of app. 1.012. After over 48 hours in the primary, it was showing no signs of life. water and ice
I usually submerge my brewpot in a sink or bathtub full of ice water. The cold water usually cools it to about 75 degrees in 30 to 40 minutes or so. I leave the lid on to keep out bad stuff but tilt it just a bit to let some hot air escape and speed the cooling.

http://www.bobbrews.com/bobkits.html has a "Rio Grande Cerveza." Although I've never used the Mexican kit, I did make Imperial Stout using the kit from this shop and it was good.
