I've heard that a month in plastic is ok as far as O2 goes. Past that, think about glass or steel. Most normal gravity ales will be fine in the bucket.

Yup. Yeast won't get filtered out until something like 0.5 micron mesh size. They're tiny! Even optically brilliant beer has a lot of yeast in suspesion that you can't see.

I haven't tried it but from what I hear it ferments out pretty light and dry. You might not notice it except for the additional dryness it will add. One day I'm going to try to make pre-tequilla by fermenting just some agave syrup & water. Might be good if I can get it to freeze and then use it ...

I'm also a little confused about the word "lost". Before 2 weeks, the bottles were carbonated, and then afterwards they were not? As for the iodophor, I have used that many times. Lately I'll mix up a fairly concentrated solution (probably 5 times label strength) and squirt it into the bot...

If you're doing any sort of mash (partial or all-grain), you can turn up the temp to give your beer more body but less fermentable sugars.

Instead of changing the mash temp, you can add maltodextrine to boost the body without adding sweetness. To add sweetness and body, try some crystal malts.

Out of curiousity, would making a very low gravity wort (say 1.020) which is fairly unfermentable also work? If it starts at 1.020 and ends at 1.010, there would only be ~1% alcohol. Is that close enough to be "non-alcoholic"? Would it taste any good?

How does it taste? I'd hazard a guess that you might be ok, as there should be a CO2 layer above the beer with or without an airlock present.

If it tastes ok go ahead and keep it, bottle it, and see how it goes.

When priming in the keg, use less sugar. I think you only need 1/3 the amount you'd add if you were bottling. There's less headspace in the keg so you don't need to generate as much pressure.

I've only used the bitter peel. It doesn't add that much orange flavor, since the pith (the white stuff under the peel) contributes most of the flavor, which is bitter.
