Extract

You could also add some extract to the boil to make up for the grain that you couldn't add to the Mash.

Grain Bill

Even at around 1.1 quarts per pound of grain, you would end up at around 12 gallons of mash with a 35lbs grain bill. I think the max you can do in a 10 gallon cooler would be closer to 28lbs. Good luck.

I think that the 2 row pale would be fine to substitute for the pilsner. The biggest difference is that pilsner malt is paler than the pale malt, but it shouldn't make that much of a difference. The paler the better. As for the temp, anywhere between 55-65 is good. After fermentation age it cold lik...

Wheat Beer

Here is a recipe that I used a couple of times and had good results with:

12oz. German Munich Malt
6.25lbs Muntons Wheat DME
1 oz. Tettnanger Hops (boil for 60min)
Wyeast 3638 Bavarian Wheat Yeast

Good Luck.

Kegging Equipment

There are a couple of places that have good selections on kegging equipment. I recently ordered some stuff from www.kegworks.com and they were very good. Also I have heard good things about www.wholesaledraft.com Also I have some info on my site about building a kegerator: http://web.mac.com/richkue...

Thanks

Well it sounds pretty similar to what I did in the past although I am going to give it another shot for my next batch. If nothing else it is certainly easier and faster than fly sparging and I will just pad my grain bill a bit in case efficiency suffers. Thanks for the info.

Any Tips

I have never had much luck but maybe my process is flawed. Can you tell me what you are doing? Thanks.

Good thermometer

I also had one of those electronic thermometers and found the same problem after a few brewing sessions. I think the problem with them is that they are designed for meat and get fouled up by all the moisture when placed in a mash or brew kettle. Anyway my recommendation would be for a dial thermomet...

Homemade Sparge Arm

I have also tried batch sparging, although you generally lose efficiency with that method and will have to compensate with additional malt. I do agree that it is much easier to do though. I currently use one of those Phil rotating sparge arms which seems to work fairly well for fly sparging, but wou...

I will never bottle again

I actually just bottled my last batch yesterday because all of my kegs are filled in preparation for my annual Oktoberfest party. I couldn't beleive how aggravating it was. i guess it has been about 5 years since I bottled, so I had forgotten just how much work it is. Kegging usually only takes me a...

Yeast

Adding additional yeast shouldn't affect the taste of the beer. Besides the alternative is that you beer may never ferment. The only problem that you may have is that when fermentation doesn't start for an extended period of time, your wort is very susceptible to bacterial contamination. I would giv...

You could always try pitching more yeast. Best of luck.

30 Seconds on airlock

I have gotten lazy about taking gravity readings and usually just wait until it takes 30 seconds or more between bubbles on my airlock. Hardly scientific, but I have had good success with this method.

Follow-up Question

What kind of setup are you referring to? The actual kegs, or a kegerator type of setup? If you already have the tank, you really just need to get a couple of kegs and the regulator. You can buy reconditioned kegs pretty cheap, although I am not sure what the regulators cost these days.

Patience

I can see that you are very anxious to get this Oktoberfest beer ready to drink by the start of the actual Oktoberfest, but some things in life only come to those who wait. I am sure you can create a very fine dark ale with your recipe fermenting at warmer temperatures, although to actually create a...
