You could also add some extract to the boil to make up for the grain that you couldn't add to the Mash.

Grain Bill
Even at around 1.1 quarts per pound of grain, you would end up at around 12 gallons of mash with a 35lbs grain bill. I think the max you can do in a 10 gallon cooler would be closer to 28lbs. Good luck.

I think that the 2 row pale would be fine to substitute for the pilsner. The biggest difference is that pilsner malt is paler than the pale malt, but it shouldn't make that much of a difference. Here is a recipe that I used a couple of times and had good results with:
12oz. German Munich Malt
6.25lbs Muntons Wheat DME
1 oz. Tettnanger Hops (boil for 60min)
Wyeast 3638 Bavarian Wheat Yeast

Well it sounds pretty similar to what I did in the past although I am going to give it another shot for my next batch. If nothing else it is certainly easier and faster than fly sparging and I will just pad my grain bill a bit in case efficiency suffers. Thanks for the info.

I also had one of those electronic thermometers and found the same problem after a few brewing sessions. I think the problem with them is that they are designed for meat and get fouled up by all the moisture when placed in a mash or brew kettle. Anyway my recommendation would be for a dial thermomet...

30 Seconds on airlock
I have gotten lazy about taking gravity readings and usually just wait until it takes 30 seconds or more between bubbles on my airlock. Hardly scientific, but I have had good success with this method.
Follow-up Question
What kind of setup are you referring to? The actual kegs, or a kegerator type of setup? If you already have the tank, you really just need to get a couple of kegs and the regulator. You can buy reconditioned kegs pretty cheap, although I am not sure what the regulators cost these days.
