Syrup
I do know of a microbrewery around here that actually adds maple syrup to its brown ale in secondary without issues. However I might recommend this procedure if you pasteurize the syrup before adding.

The very first thing you need to decide is how big you want your system to be ( 5 gallons, 10 etc ). Remember unlike extract you will be boiling your enire batch. Which ever you choose stick with single step mash
My first all grain batch was a stout. Uhhhh...
I could be wrong on this, but I wouldn't think the dye they use on pantyhose would be safe for human consumption. But if it is, I think it would most definitely cause an off flavor. Of course I have absolutely no background in hosiery.

Out of the selection I would have to go with the celebration clone, possibly with little less bittering hops or the Brown. I might suggest a lightly spiced belgium trippel style. adding syrup
I don't know if it helps but there is a local brewery who produces a Maple nut Brown and after taking the tour they indicated they simply add in the maple syrup in secondary without any special prep ( boil etc ).
