Definitely chill the sample -- you won't get an accurate reading if you try to measure your gravity at 200+, even with a correction factor.

I think my post was misunderstood -- I'm in full agreement with Bill. The default should be set to 20 minutes. However, it should also be adjustable so that brewers who don't agree with the 20 minute assessment can change it. 8)

Different sparging -- I fly sparge for 60-75 minutes, so I'm not really delaying anything by holding the temp for 30 min before cranking up the burner. I might add ~5 minutes to my wait time. If I was doing batch sparging, I'd probably do it different. 8)

Whenever I FWH, I make sure that the hops steep in the hot wort for at least 30 minutes (usually longer) before I crank up the boil. When I collect the wort, it's 160-170F, so I just let the hops steep at that temp. Once 30 minutes have passed, then I turn on the burner, and it usually takes another...

From what I've read recently, analysis shows that first wort hops add as many (or a bit more) IBUs as your bittering hops, but the taste is much different. Well, with fly sparging, you don't have to keep liquid over the grain bed when you get near your target volume, but until the last gallon or so, you do. I remember some software having the Register button dimmed until all fields are input correctly, but like you I don't think I've ever run into one like this that dims as soon as you type something. You're right -- it's not very intuitive and it certainly is confusing.
