I am going to make a "holiday" beer, an amber ale with cinnamon. All grain 5 gallon final volume.
How much cinnamon should I put in the boil and how long to get a taste of cinnamon , I don't want it to over power the beer.

Roasting my own Malt
Has anyone here tried roasting their own malt?
I will be buying a 50# bag of Briess 2 row, I was thinking of trying to roast a few pounds to make my own chocolate malt.
Any comments, suggestions?

culturing yeast from bottle beer
Has anyone tried culturing yeast from bottled homebrew? I have always wanted to try it with my homebrews that were successful. My degree is in cell biology so I understand the concept pretty well.
I was wondering about how well it works in the real beer world.

how long can grains be stored
I was thinking of buying a 50# bag of Briess 2 row and crack it as I use it.
How long will this last?
What is the best storage method?
It will take me about a year to use it up.

I went to Lowes last night to check out copper tubing and 20' of 3/8" was $68.
Is it possible to use PVC tubing (or any other type) for a wort chiller?
I know that copper has better heat transfer but with pvc a longer coil could easily be made.
