Ingredients (All Grain5.5 gal)

  • 17.5 lbs English 2-row Pale

    English 2-row Pale

    All English Ales. Workhorse of British Brewing. Infusion Mash.

  • .5 lbs English Amber Malt

    English Amber Malt

    Roasted malt used in British milds, old ales, brown ales, nut brown ales.

  • .5 oz Warrior® - 16.0 AA% whole; boiled 90 min

    Warrior®

    New hop with much potential. Very stable.

  • .5 oz Warrior® - 16.0 AA% whole; boiled 75 min

    Warrior®

    New hop with much potential. Very stable.

  • .33 oz Warrior® - 16.0 AA% whole; boiled 60 min

    Warrior®

    New hop with much potential. Very stable.

  • .33 oz Simcoe® - 13.0 AA% whole; boiled 35 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • .75 oz Willamette - 7.0 AA% whole; boiled 25 min

    Willamette

    This hop is used for finishing and dry hopping American and British style ales. Aroma is mild and pleasant ans slightly spicy

  • 1 oz Glacier - 8.5 AA% whole; added dry to secondary fermenter

    Glacier

    An excellent new variety with balanced bittering properties combined with a good aroma profile.

  • .5 oz Sterling - 13.0 AA% whole; added dry to secondary fermenter

    Sterling

    Perceived to be similar to a Saaz and Mt. Hood combination. Finding favor as a Saaz replacement.

  • 1 oz Millenium - 5.5 AA% whole; added dry to secondary fermenter

    Millenium

    Very new hop. Primarily used for alpha potential.

  • Wyeast 1187 Ringwood Ale™

    Wyeast 1187 Ringwood Ale™

    Notorious Yeast of European origin with unique fermentation and flavor charateristics. Distinct fruit ester and high flocculation provide a malty complex profile, which clears well. Thorough diacetyl rest is recommended after fermentation is complete.

Notes

Replace Will. hops with Palisade. Mash in at 152F for 60 Min. Sparge as usual. Boil time: 90 min. Use continuous hopping - slowly add measured amounts of hops over time into boil rather than adding all at once. Cool and ferment at 71-74. Age and enjoy.

Looking good!

I made this today, OG was right on, had to juggle some hops to get all the IBU's - I did 6.5 gallons though, so everything was a bit larger. Will update as batch goes on. J UPDATE: 12/31/2006 Just finished bottling, WOW, curl your toe hair hoppy! My OG was 1.086, FG was 1.009 so I labled this as 10/100 IPA. Dry hopping makes this beer. I can't wait for this to finish, too bad it won't be ready for new years day. I'll update after first tasting at 5 days. 4 stars so far -- J

This beer is great. The hops rule. The simcoes are really prevalent in the finish and give it a citrus touch. The ABV is impressive also. I'll be making this again, but will probably back off on the alcohol so that I can enjoy/remember drinking more than one of two!! J More stars now that i't finished
