Ingredients (All Grain5.5 gal)

  • 5 lbs Rice Flaked

    Rice Flaked

    Used to add fermentables without increasing body or flavor. Produces a milder, less grainy tasting beer. Examples: American lagers, Bohemian lagers, Pilsners

  • 1 lbs Candi Sugar Dark

    Candi Sugar Dark

    Smooth taste, good head retention, sweet aroma and high gravity without being apparent. Use in Belgian and holiday ales. Use clear for tripels, amber for dubbels, and dark is used in brown beer and strong golden ales.

  • 1 lbs Honey

    Honey

    Imparts sweet and dry taste. For honey and brown ales. Also: specialty ales.

  • 1 lbs Candi Sugar Amber

    Candi Sugar Amber

  • .25 oz Nugget -13.0 AA% pellets; boiled 60 min

    Nugget

    This is very bitter and often used in medium to dark ales and lagers. Aroma is quite heavy and herbal.

  • .5 oz Crystal -3.2 AA% pellets; boiled 30 min

    Crystal

    Mild. 'Noble'. Used mainly for its aroma which is mild and pleasant.

  • .5 oz Nugget -13.0 AA% pellets; boiled 1 min

  • 1tsp Irish Moss -15 mins (omitted from calculations)

    Irish Moss

    A dried red-brown marine algae. Fining agent to remove large proteins. Negatively charged polymer attracts positively charged protein-tannin complexes (extracted from grain husks and hops) during the boil. This action is aided by the clumping of proteins in the boiling process. Irish moss settles to the bottom of the brew kettle with spent hops and hot break material at the end of the boil.

  • .5tsp Wyeast Nutrient -15 mins (omitted from calculations)

    Wyeast Nutrient

    Although wort is a good growth medium for yeast, additional Wyeast Nutrient will reduce lag time, improve yeast viability and provide consistent attenuation rates. Low assimilable nitrogen concentrations (FAN) of grape must or wort have long been known as a cause of sluggish or stuck fermentations. Wyeast yeast nutrient, a blend of vitamin B's, minerals, inorganic nitrogen (DAP), organic nitrogen (amino acids), zinc, phosphates and other trace elements will benefit yeast growth and carbohydrate uptake for a more rapid, complete fermentation. Use 1/4 tsp per pint for beer propagation, 1 tsp per 5 gallons for wine or beer fermentation or 1.5 oz per 10 barrels for beer fermentation.

    This yeast is a little more attenuative than WLP002. Like most English strains, this yeast produces malty beers. Excellent for all English style ales including bitter, pale ale, porter, and brown ale.

Notes

No grains. Ferment at 63F. Rice is rice syrup solids.

Instead of substituting grains, try using Clarity Ferm. It allows you to use malted barley just like any other beer, but when added at the time you pitch yeast, it will greatly reduce the glutens in your beer. My wife is gluten sensitive, and drinks my beers with zero problems. Doesn't affect flavor, aroma, etc. at all. Excellent product!

Sadly, Clarity Ferm DOES NOT make any beer gluten free. It does reduce the gluten level, but for those who have no tolerance to gluten, it doesn't help. I have used this product for years and it helps make some really clear beers. .
