    Sweet, caramel, toffee flavor. Characteristics & Applications: • In contrast to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam, foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel Malt 40L is a roasted caramel malt that imparts golden to light red color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 6-Row Malting Barley varieties.

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 3 oz Cascade -5.3 AA% whole; boiled 5 min

    Cascade

    Spicy with citrus notes. Slightly grapefruity.

    Although wort is a good growth medium for yeast, additional Wyeast Nutrient will reduce lag time, improve yeast viability and provide consistent attenuation rates. Low assimilable nitrogen concentrations (FAN) of grape must or wort have long been known as a cause of sluggish or stuck fermentations. Wyeast yeast nutrient, a blend of vitamin B's, minerals, inorganic nitrogen (DAP), organic nitrogen (amino acids), zinc, phosphates and other trace elements will benefit yeast growth and carbohydrate uptake for a more rapid, complete fermentation. Use 1/4 tsp per pint for beer propagation, 1 tsp per 5 gallons for wine or beer fermentation or 1.5 oz per 10 barrels for beer fermentation.

Batch 21 - #3 on new system NorthWet Amber Rain Ale Brew Date: 3/23/2015 Start time: 11am Sunny, partly cloudy, then showers, high of 59° 6 gals Foundation Water @ 160° HLT Strike Water @ 170° Mash in @ Noon Mash Temp 144° @ 12:12pm Rest until 12:30pm HERMS/Recirc to raise temp Sacc Rest @ 156 @ 1pm Recirc/Vorlof @ 1:20pm Pump Over & Sparge started @ 1:40pm ended @ 2:30pm Boil started @ 2:45pm Small boil/foam over Added a couple gallons of remaining wort from the mash tun during the boil to keep a full boil of 13.5 gal. 90 min boil 60min 1oz Magnum Leaf Hops 35min 1oz Magnum 30min added approx 2 gals of wort to max out kettle to 14 gal 25min 1oz Amarillo Leaf Hops 20min 1oz Amarillo 15min 2.5 tablets of Whirlfloc 10min 1.5 teaspoons of Wyeast Nutrient 5min 1oz Cascade Leaf Hops 2min 1oz Cascade Flame 1oz Cascade Whirlpool for 20 mins to set hop bed. good pump over and transfer of 13 gallons Racked to; FastFerment #3 (7g) pitched 1332 Northwest Ale Wyeast (pretty good inflation) MiniBrew (5.75g) pitched US/05 in 800ml of water 4hrs with swirl. Growler (50oz) pitched US/05 in 25ml of water Gravity Readings 1st runnings 1.074 Pre Boil 1.070 Original Gravity 1.070 TG: 1.016 4/1/15 MiniBrew Fermentor with US/05 was dry hopped with 2oz Green Bullet Hops. 5/2/15 - Cold crashed for 2 days to settle yeast and debris MiniBrew - 5 gal racked to Coors #2 1/6 bbl keg. Fast Ferment #3 - 6 gal racked to 30 x 22oz bottles with 6 Muntons priming tablets per bottle.
