This has the makings of a very good beer...I am going to make 10 gallons and then split it at secondary and add vanilla beans to both batches. For the last 5 days before kegging, I am going to add to one of them some oak chips and then add some Jim Beam at kegging to make a Vanilla Bourbon Porter. Going to brew this next week. Have used this base recipe before to make a smoked porter which was fantastic

Ingredients (All Grain11 gal)

  • 2 lbs Crystal Malt 90°L

    Body and Richness. Distictive Nutty flavor and or sweet, smooth caramel flavor and a red to deep red color. For porters, old ales.

  • 15 lbs 2-Row Brewers Malt;Briess

  • 1 lbs American Black Patent

    Provides color and sharp flavor in stouts and porters.

  • 2 lbs Weyermann CaraMunich® III;Weyermann

    Provides body. For Oktoberfest, bock, porter, stout, red, amber and brown ales.

  • 1.5 lbs American Caramel 40°L

    Provides color, a unique flavor, body, and contributes to foam retention and beer stability.

  • 2 lbs Corn Flaked (Maize)

    Corn Flaked (Maize)

    Generally a neutral flavor, used to reduce maltiness of beer. Produces beer with a milder, less malty flavor. Uses: Primarily for light Bohemian and Pilsner lagers.

    Vanilla Beans have a sweet, perfumed aroma with a woody or smoky flavor. Pure Vanilla Extract has a similar aroma. Vanilla Beans are the long, greenish-yellow seed pods of the tropical orchid plant, Vanilla planifolia. Before the plant flowers, the pods are picked, unripe, and cured until they're dark brown. The process takes up to six months.

This turned out really well and was a hit with all who tried it. Smooth and creamy. I also did another batch where I added some bourbon soaked oak chips....even better!!!
