  • 26 lbs Crystal Malt 10°L

    Crystal Malt 10°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

    BEST Wheat Malt dark emphasises the effervescent freshness and the typical top-fermented taste of wheat beer in the same way as the light variety. In addition the colour and the aroma of the beer is intensified. It is produced from high quality brewing wheat. Malting processes adapted to the raw material highlight the particular qualities of this malt.

    Magnum

    A West Coast hop with high Alpha Acid. Excellent bittering hop.

  • 0.75 oz Centennial - 8.2 AA% pellets; boiled 30 min

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 4 oz Centennial - 9.1 AA% pellets; boiled 20 min

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

  • 2 oz Liberty - 4.0 AA% pellets; boiled 10 min

    Liberty

    Used mainly for finishing German and American style ales and lagers. Aroma is mild and pleasant.

    Aromatic but acceptable for bittering. Medium aroma with floral and citrus tones. Good in medium to dark ales.

    White Labs WLP862 Cry Havoc

Notes

All-grain Cascadia/Black IPA. Cold steep Breiss Midnight Black Wheat (calculator selects Best Maltz) for color. Use Whirlfloc at knock out minus 10 minutes. Adjust water chemistry for San Francisco, CA.
