"... best beer you brewed so far." - Sad considering I screwed up with the mash efficiency and had to add table sugar.

Crystal Malt 10°L
Crystal Malt 10°L
Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

Slight residual diacetyl and fruitiness; great for stouts. Clean, smooth, soft and full-bodied.
Notes
I also added the juice from the two oranges. I did not add the juice from the lemons to avoid the bitterness that it would add. I added the zest at the last 5 minutes of the boil to kill any bacteria on the surface of the fruit. I had very poor mash efficiency which is why I added the table sugar, otherwise I would not have used the sugar. I believe that the poor mash efficiency is due to a low mashing temperature and short mashing time (multi-tasking is not one of my strong points). When I do this again, I will mash at 153 degrees F. and mash for about 90 minutes.

How does lemon juice add bitterness? Do you mean acidity?
