If you re-pitch
try washing your YEAST
Its a good idea to wash your yeast before repitching it. As weird as it sounds this is a trick that will remove trub and other material that clings to the yeast cells. As a result you will get better performance from your yeast. Professional brewers use an acid wash, which kills contaminating bacteria. This is a bit on the dangerous side and requires more direction then given in this tip. Washing with water is much safer and actually quite useful, especially with lager yeasts. Yeast to be washed must first be given 12 hours of refrigerated storage. To wash yeast, first sanitize a quart jar. Fill it with boiling water, screw the lid on loosely, and place it in the fridge to cool overnight. The next day flame the mouth of the jar that contains the yeast, then pour off about half of it contents. Fill the jar with some of your cool water, stir thoroughly with a sanitized spoon. Replace the lid and refrigerate for about 8 to 12 hours. Repeat this procedure again about 8 to 12 hours and then once more. And that is it ,after this process you will have a much cleaner more useful yeast.
