Ingredients (Extract5 gal)

  • 1.25 lbs American Chocolate Malt

    American Chocolate Malt

    Use in all types to adjust color and add nutty, toasted flavor. Chocolate flavor.

  • 0.50 lbs Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 0.50 lbs American Victory

    American Victory

    Provides a deep golden to brown color. Use in nut brown ales, IPAs and Scottish ales.

  • 0.50 lbs Crystal Malt 120°L

    Crystal Malt 120°L

    Pronounced caramel flavor and a red color. For stouts, porters and black beers.

  • 3.0 lbs Liquid Light Extract

    Liquid Light Extract

    A brewer can create any beer style with this extract when used as a base in conjunction with colored malts and selected hops. Contains no colored malts or hops.

  • 3.0 lbs Liquid Amber Extract

    Liquid Amber Extract

    Amber is used predominantly in the production of medium-colored beers such as pale ales, IPAs, and bitters.

  • 1.50 oz Mt. Hood -5.7 AA% pellets; boiled 60 min

    Used mainly for aroma and flavor in American and German style ales and lagers. Aroma is mild, pleasant, light, and clean.

  • White LabsWLP013London Ale

    White LabsWLP013London Ale

    Dry, malty ale yeast. Provides a complex, oakey ester character to your beer. Hop bitterness comes through well. This yeast is well suited for classic British pale ales, bitters, and stouts. Does not flocculate as much as WLP002 and WLP005.

The OG came out to 1.050 as I expected it to be lower than the calculations. I tasted what was left in the hydrometer tube and the flavors were what I hoped for. I did, however, take a substantial risk due to the (alleged)water shortage in SoCal. Instead of chilling with the immersion chiller, I transfered and sealed the wort up in the primary and let sit over night in my chest freezer at 50 degrees F. I took out yesterday, opened, aerated, pitched yeast and sealed back up. Placed back in Chest freezer at 66 degrees, so we will see what happens. This is what makes homebrewing great!

Thanks for commenting Chief! You mean King Neptune wasn't serving porter pre-initiation?! I'm sorry to say I am not a Chief brewer, but one of your Marine brethren.

Gravity reading

I took a gravity reading on 07/08/09. The beer had been in primary for 9 days. The 2nd and 3rd day there was an abundance of activity, it seemed real aggressive from what I could tell. On the evening of day 9 I took a gravity reading of 1.020, OG was 1.050. It is possible that the yast has reached it's full attenuation, but since I didn't have to break the seal on the fermenter to take the reading, I gave it a good shake to see if the yeast could be agitated again. Tonight I will find out! I did, also, smell it and taste it. The aroma was very coffee like with hints of chocolate. It smelled great and the taste was exactly what I was looking for!

Despite the fact that I'm biased, this brew turned out exactly how I wanted it to. noticeable hints of chocolate and coffee aromas and a rich roasty taste up front. It finishes with a nutty flavor with a slight bitterness, just what I like! I will pick up several different porters from the store and compare. Cheers!
