Attempt at a clone of DFH's 90-minute IPA. Please consider the notes for dry-hopping schedule and yeast particulars.

Ingredients (All Grain5 gal)

  • 20.0 lbs German 2-row Pils

    German 2-row Pils

  • 1.5 lbs English Amber Malt

    English Amber Malt

    Roasted malt used in British milds, old ales, brown ales, nut brown ales.

  • 2.0 oz Amarillo® - 9.8 AA% whole; boiled 45 min

    Amarillo®

    Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 0.75 oz Simcoe® - 13.0 AA% whole; boiled 45 min

    Simcoe®

    Used for aromatic, and especially bittering properties.

  • 0.75 oz Warrior® - 13.0 AA% whole; boiled 45 min

    Warrior®

    New hop with much potential. Very stable.

  • 1 tsp Irish Moss - (omitted from calculations)

    Irish Moss

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

    Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

Notes

I am using Wyeast's Rogue Pacman yeast, which is probably somewhat similar to 1056. Made a starter culture to contend with the high gravity. Dry hop with 1 oz Amarillo and 1/2 oz each Simcoe & Warrior.

if you want to make a 90 minute clone you might want to boil your hops for 90 minutes!
