I've made this batch over and over. This *is* Foster's Lager! Don't be afraid to use the table sugar. I know all the books say 'cider - don't don't it.' but its okay in this beer.

Ingredients (All Grain5 gal)

  • 5 lbs American 2-row

    American 2-row

    Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

  • 1.25 lbs American 6-row Pale

    American 6-row Pale

    Tends to increase lautering efficiency due to a stiffer husk. May be used as the base malt for any beer style. The enzymes in all varieties of the current crop are sufficient to support high percentages of specialty malts and adjuncts.

  • 1 lbs Dextrine Malt

    Dextrine Malt

    In light-colored beers to give additional body. Adds richness without color.

  • .5 lbs Crystal Malt 20°L

    Crystal Malt 20°L

    Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales.

  • 1.5 lbs White Table Sugar (Sucrose)

    White Table Sugar (Sucrose)

    Common household table/baking sugar. Lightens flavor and body of beer. Can contribute a cider-like flavor to the beer if not cold-fermented or used in large quantities.

  • .5 oz Pride of Ringwood - 6.8 AA% pellets; boiled 60 min

    Moderate.

  • .5 oz Pride of Ringwood - 6.8 AA% pellets; boiled 30 min

    Moderate.

  • Wyeast 2272-PC North American Lager

    Wyeast 2272-PC North American Lager

    Traditional culture of North American and Canadian lager and light pilsners. Malty finish.

just to back up bill,Carlton & United (Fosters)won't addmit to using sugar.but when one of our club members saw a C.S.R. (Commonwealth sugar refiners) tanker on the grounds of the brewery during a tour.... well!!!!!!

Can someone post the time and temp for mash? Also, how long in Primary/secondary fermenter and at what temperatures? Thanks

Mash time and sugar

I mashed at 156 degrees x60 min. Had conversation at 45 min. Also added sugar early since I wasn’t sure if a late addition would work. Would be nice to have had some specifics. Lagering now. Had to substitute yeast and hops to comparables due to in availability. We’ll see.
