Ingredients (All Grain30 L)

  • 11.25 kg Maris Otter Pale

    Maris Otter Pale

An English thoroughbred and a favored choice of malt for many brewers. Simpsons' Maris Otter has a rich and nutty flavor and despite its small, berry size has a strong husk. This malt delivers predictable brewhouse performance with modest, yet consistent extracts. Brewers can expect good runoffs with clear wort.

  • 0.72 kg Belgian Munich

    Belgian Munich

Used to increase malt aroma and body with slightly more color.

  • 112 g Amarillo® - 8.5 AA% whole; boiled 90 min

    Amarillo®

Grown in Washington. A newer multi-use hop with a nice citrus-flower bouquet and medium-high acid content suited for bittering. Used in American Ales and IPAs.

  • 33 g Simcoe® - 13.0 AA% whole; boiled 90 min

    Simcoe®

Used for aromatic, and especially bittering properties.

  • 22 g Warrior® - 16.0 AA% whole; boiled 90 min

    Warrior®

New hop with much potential. Very stable.

  • 45 g Glacier - 8.5 AA% whole; added dry to secondary fermenter

    Glacier

An excellent new variety with balanced bittering properties combined with a good aroma profile.

  • 22 g Sterling - 13.0 AA% whole; added dry to secondary fermenter

    Sterling

Perceived to be similar to a Saaz and Mt. Hood combination. Finding favor as a Saaz replacement.

  • 22 g Millenium - 5.5 AA% whole; added dry to secondary fermenter

    Millenium

Very new hop. Primarily used for alpha potential.

  • Wyeast 1056 American Ale™

    Wyeast 1056 American Ale™

Used commercially for several classic American ales. This strain ferments dry, finishes soft, smooth and dean, and is very well balanced.

How long should a brew of this type age?

It had a month on dry hops and has been in the bottle for 2 months so far. I feel it still needs another couple of months to be ready as a sample I tried a couple of weeks ago still tasted a little young. The flavour is great but it definitely needs to mellow and combine a little. Should be great when it is ready.
