Yields a slightly higher extract than Six Rox brewers Malt. Tends to give a smoother, less grainy flavored beer. Some brewers claim they can detect a significant difference in flavor. Lower protein and will yield a lower color than Six-Row Brewers Malt

Sweet, mild caramel flavor and a golden color. Use in light lagers and light ales. Characteristics & Applications: • In contract to Brewers Malt, glassiness is a distinguishing characteristic of Caramel Malt. The glassy endosperm creates the desirable non-fermentable components giving true Caramel Malt the ability to contribute body (mouthfeel), foam foam retention, and extended beer stability, while contributing color and unique caramel flavor. • Caramel 10L is a roasted caramel malt that imparts golden color. • Use 3-7% for Pilsener-style beers for balance. • Use 5-15% to provide color, sweetness and color to light amber beers. • Produced from AMBA/BMBRI recommended 2-Row Malting Barley varieties.

From Northern California. This strain is more fruity than WLP001, and slightly more flocculant. Attenuation is lower, resulting in a fuller bodied beer than with WLP001.
Notes
***This receipe is dedicated to my son in law who passed away on 6/13/2005 from cancer.*** Use WLP060 Strike @ 122 deg F and hold for 15 min. Add boiling h2o to reach 152 deg F and hold for 45 mins. Mash out for 15 min @ 168 deg F, then sparge to obtain 6.5 gal in kettle. Bring to boil and boil for 15 mins. then add 1/3 bittering hops for 15 mins and do same until all bittering hops are used. Add flavor hops during last 30 mins of boil, then the orange peel and corriander seed and Irish Moss for last 15 min then the aroma hops during last 1-2 minutes of boli. Cool wort as fast as possible then in kettle whirpool for at least 30 mins then rack off trub and into primary fermenter. Pitch yeast (create a 1 quart starter 1-2 days before hand) and ferment 5-7 days or until slowed down then rack to secondary fermenter and continue for 3 weeks or until fg is reached and bier has cleared. Prime w/ 3/4 cup of corn sugar and bottle or keg. Bier will be ready in about 6 weeks. ** I will be brewing this receipe every year during the last weekend of April for now on to celebrate the life and memory of Howie! Finally tried it out and it reminds me of Pilsner Urquell! I am very pleased with this brew, but I would suggest the following: 1) add another 1/2 lb of crystal malt to sweeten it up 2) add 1/4 to 1/2 lb of Cara-Pils to improve head retention (it's not bad as it is though..try the lower amount first!) 3) use the corn adjunct and do away with the rice or even do away with both! (will have to experiment with it) 4) add 4oz of biscuit malt 5) add an additional 1/4 teaspoon of the Sweet Orange Peel and the Crushed Corriander Seed A very enjoyable beer without the waiting involved for a true lager! Please let me know if you try this recipe and your thoughts on it as well!
