Ingredients (All Grain22 L)

  • 3.45 kg Australian Pilsner

    Australian Pilsner

    Well modified, good attenuation.

  • 0.5 kg German Dark Munich

    German Dark Munich

    Enhances body and aroma. Stout, schwarzbier, brown ale, dark and amber ales.

  • 0.8 kg German Wheat Malt Light

    German Wheat Malt Light

    Typical top fermented aroma, produces superb wheat beers.

  • 0.25 kg Weyermann Carafa® II;Weyermann

    Weyermann Carafa® II;Weyermann

    Carafa I, II and III also are available de-husked. Adds aroma, color and body.

  • 0.20 kg Roasted Barley

    Roasted Barley

    Sweet, grainy, coffee flavor and a red to deep brown color. For porters and stouts.

  • 22 g Perle -7.0 AA% pellets; boiled 60 min

    Perle

    Used mainly for its minty bittering and good green hop aromas in all non-pilsener lagersand wheats. Aroma is pleasant and slightly spicy

  • 10 g Hallertauer Mittelfrüher -3.2 AA% pellets; boiled 40 min

    Fine, 'Noble'.

  • 10 g Tettnanger -5.7 AA% pellets; boiled 40 min

    Mild, slightly spicy. 'Noble'.

  • 15 g Czech Saaz -4.0 AA% pellets; boiled 1 min

    Very mild. 'Noble'.

  • White LabsWLP802Czech Budejovice Lager

    Pilsner lager yeast from Southern Czech Republic. Produces dry and crisp lagers, with low diacetyl production.

Notes

This yeast should be nice and crisp, that the profile I want with this beer. The 40 minute additions are First wort hops. The Carafa 11 is Carafa special de-husked Single infusion mash at 68C. Ferment at 12C for 3 weeks, rest at 20C for 4 days, rack to secondary and lager for 4 weeks min.

Indeed, it is an award-winnig reciepe. I brewed Schwarzbier for the first time in my life, and it got first place in Schwarzbier category, on a local homebrewers contest. I used different yeast - Munich Lager, because I had them at hand, and a bit different, local hops.
