Hello,

I'm thinking about making a batch of Saison. The recipe I'm going to use calls for dried ginger and orange peel. I'm fine with the ginger but I'm thinking of trying juniper berries instead of orange peel. The only thing is I'm not sure of how much to go with. How does 2 tablespoons in the boil for five minutes for a five gallon batch sound.

Juniper berries

Hi. Juniper berries sounds really good for a saison. 2 Tablespoons is maybe 1.5-2 oz? That will give a good solid flavor. I've made the hennepin clone with ginger and orange. I think the berries will round out the flavor nicely. The orange is kinda weak. Let me know how it comes out. :D

I kind of figured that if it was in an area were they also make gin, juniper berries wouldn't be that odd of an additive.
