I had not brewed in eight years. I wanted to get back into it, but I was
a little fuzzy on the all-grain business so I decide to do an extract.

7.5 pounds Wheat Extract 60/40
1 oz Tett 4.25 AAU Boil for 60 minutes

I brewed on New Years Eve. I had forgotten about the hot break. It
was something, one minute we are near a boil and the next we had
foam everywhere. It was fun.

I pitched a pale ale yeast that I have had around for a while. I had started
it twice but failed to brew. I cleaned the yeast with water several times
and then started it in a liter of unhopped wort. I pitch this and it
really took off.

I decide to call this batch Eve's Wheat. Eve spent 36 hours in the primary
coming down from 1050 to 1020. I siphoned into the secondary glass carboy and put one of my tee shorts over it to protect it from the sun light.

Three days in the secodary and burping once every 40 seconds. I know this
was done all haphazard but I am having fun with it. I will update. Willy

My wife was asking me about the tee shirt over the carboy.
Jokingly she ask me who my buddy was? I told her that was
my good friend Mr. Ski and that she could call him by his
first name Bruce.

This batch is still fermenting nicely. Willy

You sure can Dogger. Mr. Sky went into the bottle on Sunday. Smelt good, looked good and tasted good. This weekend I will crack one. I will let you
know how it turns out.

I could not wait. I put one in the frige last
night. It was in the bottle 3.65 days. LOL

Just drank it. It was a little flat but that to be expected.
I liked it. I think it will be very good. I really like how
the yeast and the Tett hopes work to add a hint of lemon.

Try Centennial hops if you want a citrus kick

This extract wheat beer turn out good. I
really like it.

I am at this moment doing my first all-grain
batch in eight years. It is good to be back.

If you are looking for a good all around brew, try my "Harp Lager Clone" ... I have given this recipe to a few local brewers, and it has become their "House Brew", as it is mine ... you will love it, just search the recipe data base for "Azorean Brewer's Harp Clone" ... It is very easy and produces an excellent glass of beer.

Thanks, I will be brewing regularly now. I ordered a 50 pound bag
of domestic 2-row, yesterday. My Corona will be getting a workout.
