lactose and malto-dextrine
I am using .5lb of malto-dextrine in my boil. I am wondering if I should use lactose in my secondary and how much. I am brewing a sweet stout. Any comments welcome. Thanks

Malto-dextrine isn't fermentable, so it'll add some residual sweetness to your brew. I would wait until racking time and taste a sample. If you feel it needs more sweetness from lactose (which is also non-fermentable) then you can add it in the secondary. Boil some up in water for 10-15 minutes to sterilize it and drive the oxygen out, let it cool, and rack this in the carboy first, then rack your brew on top.
