Recipe Critque
I am making my first all grain recipe and this is what i plan to make. Thoughts?
10 lbs. American 2-row
5 lbs. Rye Malt
0.5 lbs. American Caramel 90°L
1 oz. Magnum (Pellets, 14.5 %AA) boiled 60 min.
0.50 oz. Cascade (Pellets, 5.5 %AA) boiled 15 min.
0.50 oz. Cascade (Pellets, 5.50 %AA) boiled 1 min.
Yeast : White Labs WLP099 Super High Gravity Ale
also using rice hulls and a glucan rest

What style are you trying to make?
New brewer (since 11/09). Brewing with extracts but thinking all-grain is in my future.

Be careful with that much Rye, I'd throw in some rice hulls to help lautering. Rye can create a nightmare for sparging.

I haven't used that yeast, so I don't know what it's like, but that looks like an interesting recipe. You should get some good rye character from that amount of rye.

beta-glucan rest
I'll sometimes use a beta-glucan rest (~110-120°F) for recipes with a lot of oats, which seems to reduce the gumminess of the mash. That might help with a large amount of rye, which is very glucan rich.

I plan to do that as well. I am using a friends equipment and he has a problem with geting a high mash effeincy out of loarge volumes of grain. I am shooting for a about 9% abv, but witht he current recipe i get about 7, i know i could add sugar or honey and hit my target, but i want a full bodies beer. Suggestions?

I have a bunch of hops in my freezer and some random leftover grains that need to get used...unfortunately not what I would typically use for an IPA, but here's what I am thinking to clean everything out...I think it will be different, but that doesn't mean good....

IPA
I've had some really interesting IPAs made with German hops. I think the all-Hallertau IPA was one of the best in the Sam Adams Latitude 48 Deconstructed mix pack.
The only thing that might concern me is the mix with the harcher Chinook and Columbus hop bitterness... On the other hand, that might help keep it tasting like an IPA.
