Still fermenting after 6 days
Brewed a Wit last Sunday and it's still very, very active. Airlock is bubbling every 4 to 5 seconds with a thick krausen of about 1 inch still on top. Been like that since about Monday. OG was at 1.048. I've never had any go this long. Took a sniff through the holes in the airlock and seems to smell OK. Any thoughts?

slow fermentation
It's almost surely fine. Fermentations can vary in length due to a number of factor, and can sometimes last 2 or 3 weeks, maybe longer.
I don't make Wits, so I haven't used it, but I've read that these yeasts can be a bit slow and can get temperamental with temperature fluctuations and temperatures below the mid 60s.

Thanks for the response. 12 days in now, and its still going, but now its at about an 8 second bubble. UGH!

Last time I made a wit I had the same thing. I wouldn't worry about it. Check the gravity next week.
