SS immersion chiller
Most of the immersion chillers I see are copper tubing but I HAVE seen a few SS ones. Is there any advantage to the copper ones vs. the SS ones or visa versa?

copper vs. stainless
While there is a higher heat conductivity for copper which would theoretically lead to faster cooling, the real world thermodynamics lead to no actual difference between a copper or stainless steel chiller. The length of the immersion chiller is the more significant factor.
I guess you wouldn't need to worry about corrosion with the stainless, but I don't think its a serious concern. I'd get whatever gets you get the longest chiller for the best price.
