Chocolate Porter or Stout recipe suggestion? - Extract only!
I'm looking for an Extract recipe for a Porter or Stout that is all about chocolate - I have some belgian imported unsweetened cocoa powder that is SO much better than american chocolate that I'm dying to try a beer with it. Not looking to add any coffee, fruit, or other spices (other than maybe a little vanilla). I'm a fan of malt, not a hophead (although a mild hop flavor would be fine). I'd prefer not to do an Imperial - I'm good for about 2 beers before falling over - I can brew more than I can drink!
I don't have a Lauter Tun yet - so I can't make one of the MANY all/partial grain recipes I've seen that require sparging. I'm working on it - just missing that piece of equipment still.
Did I mention I'm a chocoholic?
Can anybody help me out here?

I think Jamil Zainasheff's book brewing classic styles has a chocolate hazelnut porter recipe in it.

You may want to check this recipe out and omit the rasberries and use your choclate in it. Here's the url:

porter recipe
Brew Your Own magazine had a good article in their mag last month about Stone Brewing company. It had a couple porter recipes in it that looked pretty good. I think one of them had chocolate in it, but I can't be 100% sure thinking off the top of my head. I'll check it out when I get home and post the recipe if it did indeed have chocolate in it.
Primary - Belgian Dubbel, Belgian IPA
Secondary - Cherry Lambic
Bottled - Bourbon Barrel Coffee Porter, Double Chocolate Raspberry Stout, Imperial Nut Brown, Apfelwein, American Amber Ale w/Homegrown Hops, Breakfast Stout
Kegged - Bass Clone, ESB

The chocolate raspberry w/o the raspeberry sounds interesting - but not sure I understand the abbreviations - is this extract or partial mash or what?

Well...
LME = Liquid Malt extract
DME = Dry Malt Extract
Specialty grains steeped in a gallon or 2 of 150 deg hot water, then rinsed:
.5 crystal 80
.5 choclate malt
.5 british pale chocolate
.25 carapils
.25 black
.125 roasted barley
etc...

Well...we're only talking about 2.125 lbs of specialty grains for this recipe and the easiest way to deal with them would be to have your home brew store mill them all together. Then you can place them in a grain bag and heat some water in a kitchen pot to about 160 degF. After heated, place the grains and grain bag in the pot and make sure that they are completely saturated within the hot water. The temperature will drop to about 150 - 152 or so and thats what we're looking for. Hold the grains in the pot for about 45 minutes then using a collander or similiar strainer, place the bad of grains in it and rinse them with 180 deg water. This would take about 1 gallon for a through rinse.
Put all the liquid into your boil kettle and top off with another gallon or so of water to get a volume of 2.5 gallons or so. Bring to a boil then remove from heat and add your dme and lme and follow the rest of the recipe for hopping etc...

Glad to help.
You will need to add about 2.5 gallons of already boiled and cooled water to top off your fermenter and also the wort from the above steps.
Let us know how you make out with this one.

Yeah, those do work great for that. I use to use the 5 gallon stainer bags for doing partial mashes on my kitchen stove.

I don't know if anyone is still interrested in this topic. I have done a simple extract chocolate porter a few times. Just get a pre-packaged extract porter or robust porter kit and add a heaping half cup of cocoa at the end of boil, after finishing hops. It is a really nice touch of chocolate. Made some great christmas six packs.
Can't wait to move out of city apartment. Need some extra space to start all grain brewing!
