Two quick yeast starter questions

Post by pirate357 »

Hey everyone, I have two quick questions. First, I made a yeast starter last night and I sanitized everything before using it, except I didn't sanitize the yeast pouch or scissors. Is this really necessary or is it just playing it safe? Also, can I use my starter after 20 hours, or is there a time frame I should stick to? Thanks.

Odds are you'll probably be fine, but you never know where that package or those scissors have been, so I'd try and remember to sanitize them next time.

If you're not going to allow the yeast to settle out and just pitch the cake, then 20 hours is probably close to optimum. Obviously getting the yeast to settle would take a bit more time.
