How do I determine hop boil times in the recipe?

Post by bryanmulholland »

Aloha,

I have a question that maybe I am am being too inquisitive about... I have found a recipe that I would like to brew, and the hops are calculated as follows:
Variety // Boil(minutes)
Northern Brewer // 60 min
Willamette // 30 min
Willamette // 15 min
Willamette // 5 min

My questions are:

1) In a 90 minute boil time, is the Northern Brewer hops only boiled for 60 minutes of the 90 minutes?

2) Or is the Northern Brewer hops entered at the 60 minute timeline of the 90 minute boil cycle?

THank you very much for anyone that can help me with this... I just want to get it right..

boil times

Aloha! And welcome to the board!

The recipe you posted seems to say 60 minutes.

For a 90 minute boil, the bittering hops are usually, but not always, added at 60 minutes. Sometimes they will be added earlier for very bitter beers to get the maximum bitterness out of the hops without having to add more.

Frankly, the difference between the bitterness added by hops boiled for 90 minutes instead of 60 minutes is so small as to make little diffference. Nearly all the hop utilization that can take place has taken place by 60 minutes, so don't worry about it.

I believe the answer is #1. It will be added when there is 60 minutes left to boil. Similarly the 3rd addition of Williamette will be added with 5 minutes left in the boil (meaning 85 minutes into the boil).

Hope that helps.

Yeah, what he said.

I misunderstood the question so I answerred a different question than you intended.

Start 90 minute boil, then wait 30 minutes.
Add 60' hops, then wait 30 minutes.
Add 30' hops, then wait 15 minutes.
Add 15' hops, then wait 10 minutes.
Add 5' hops, then wait 5 minutes.
Stop boil and chill.

In other words, when we talk about 60' hops, we mean 60' from the end of the boil, i.e., #1, NOT 60' into the boil.
