So I'm wonderig for anyone who knows alot about brown ales what are the basic guidelines you guys follow for specialty malts, especifically biscuit malt.

You should listen to the podcast on Thebrewingnetwork.com. In the archive of the Jamil's show, there's one for Brown ale. Very good description and instructive.
