I just harvested my first year Cascades. What do I do with the vines now?

Compost the vines.... I don't know of any use for them.
Next Spring: As soon as the shoots appear, dig up the rhizome & trim off all but the 2 plumpest shoots. Then bury them SHOOTS UP. This will ensure the best yield and hop character by shifting all of the plant's energy to growing the 2 shoots. Not doing so will reduce yield (yes... even though you will have less vines), cone size, alpha/beta, geraniol, farcene & myrcene. All of these are the prime constituents that brewers desire to maximize appropriate to the hop variety.
