Brooklyn....It is a small world!

B,

I grew up on Stuart Street between Ave U and V. I don't tell anyone about Gerritsen Beach, too much explaining. I worked on both boats in the Elsie-K 'fleet' during the late 70's. I liked Capt. Joe.
I was back in 1997, things have changed. If you have any questions for me email me at tjflanagan@covad.net.

Candy sugar is more like rock candy. Brown sugar is mostly caramelized cane sugar. I would only use them to obtain a specific flavor profile and in limitted amounts. It all comes down to the biological pathways the yeast use to matabolize the sugars, different sugars different mechanics leads to a different flavor profile.

Where is your brew supply store?

Good brewing,
