I grew up on Stuart Street between Ave U and V. I don't tell anyone about Gerritsen Beach, too much explaining. I worked on both boats in the Elsie-K 'fleet' during the late 70's. I liked Capt. Joe.

Candy sugar is more like rock candy. Brown sugar is mostly caramelized cane sugar. I would only use them to obtain a specific flavor profile and in limitted amounts. It all comes down to the biological pathways the yeast use to matabolize the sugars, different sugars different mechanics leads to a different flavor profile.

i actually lived on stuart between v and w. I lived in the house right next to the school yard. I went to resurrection school when i was young. When did u move? I dont have a supply store i just been looking to buy stuff online. I dont know of any stores in NYC
