Brewing my first batch (European Bock using an ale yeast) everything was fine at every stage. Tasted and tested at every stage. But something went wrong in the carbonation stage. Didnt carbonate (checked at 11 days) and had a sour cidar taste.
I dont want to think that something went wrong with the satitation process, thougth i was pretty thorough.

What I'd hope is that you either got a bit of acetaldehyde during the carbonation or the carbonation just brought the flavor/aroma out. The yeast are capable of consuming acetaldehyde, so more time at warm temperatures might help reduce that.
I had a Kölsch that gave me similar problems. It was dramatically reduced after a month or two in the cellar.
