Belgian Wit has strong yeast taste

What went wrong? Was this supposed to happen? Should I throw it out? What do I do now?

Belgian Wit has strong yeast taste

Post by justdrinkin »

I brewed a Celis Wit beer clone from "Beer Captured" and after 6 weeks of bottle conditioning, it still has a strong yeast taste to it. I used wyeast Belgian Wit liquid yeast. I've heard that this yeast strain takes a little longer to condition to loose that yeast taste, but 6 weeks? Anyone else have this problem?

Belgian Wit's are supposed to have a significant amount of yeast flavor to them. As with most Belgians, it's a huge part of the style.

As for it being a clone, I haven't tried Celis in a long time, so I can't remember the amount of yeast flavor in it.
Primary - Belgian Dubbel, Belgian IPA
Secondary - Cherry Lambic
Bottled - Bourbon Barrel Coffee Porter, Double Chocolate Raspberry Stout, Imperial Nut Brown, Apfelwein, American Amber Ale w/Homegrown Hops, Breakfast Stout
Kegged - Bass Clone, ESB
