Heather Ale

Post by capm skeezix »

Thank you all for your comments on heather ale. I think I will continue to work on an authentic Heather and in the mean time brew an amber or Pale with just a hint of heather. There is something about that taste that intrigues me. You have been a great help.

All,

This is what I found in "Clone Brews" by Tess and Mark Szamatulski.

Fraoch Heather Ale
------------------
9.25 Lbs. Golden Promise Malt
4 oz. 55L British Crystal Malt
1/2 oz. Brewer's Gold Hop's - 90 min.
1 Lb. Heather Blossoms - 90 min.
1/2 oz. E. Kent Goldings hops - 15 min.
1/4 Lb. Heather blossoms - 15 min.
1 Tsp. Irish Moss - 15 min.
1/4 Lb. Heather blossoms - 5 min.
1/2 cup Heather Blossoms - 0 min.
Wyeast - 1728 Scotish Ale
or
Wyeast - 1084 Irish Ale

Single infussion mash.
3/4 cup corn sugar primer

Good luck,

Paul.
