A while back, probably a few months, we had a discussion on honey beers. I came out against honey, but now would like to officially recant my statement and make it a matter of public record that honey beer rocks. The secret is to add it at priming, without boiling the honey. I added the honey to just boiled water and let cool at room temp, thus "pasteurizing" the honey, minimizing contamination while preserving honey aroma and flavour. The beer rocks!
