A while back, probably a few months, we had a discussion on honey beers. I came out against honey, but now would like to officially recant my statement and make it a matter of public record that honey beer rocks. The secret is to add it at priming, without boiling the honey. I added the honey to just boiled water and let cool at room temp, thus "pasteurizing" the honey, minimizing contamination while preserving honey aroma and flavour. The beer rocks! If you care to look at the recipe, it is "Honey Nut Blonde II".
