Wheat Malt and Crystal Wheat Usage Rates

Post by StAnthonyBrewery »

According to the BJCP Stylebook, wheat malt usage rates for Blonde Ale is up to 25%, Kölsch is up to 20%, American Wheat is often greater than 50%, Weizen/Weissbier is between 50% and 70%, Dunkelweizen is between 50% and 70%, Weizenbock is between 50% and 70%, Berliner Weisse is typically 50%.

How does crystal wheat malt usage rate as a percentage of the mash grist affect these general guidelines?

Another question would be, how much percentage of the mash grist is effective starch conversion possible if one were to use solely wheat malt, or crystal wheat malt, whereas the remainder of the grists are made up by two-row pale malts? How are the wheat malt and crystal wheat malt usage ratios affected by the use of lager malts?

For the purposes of this question it is understood that Caramel Wheat is substantially the same as Crystal Wheat.

Thank you.
